Winemaking and aging process: the alcoholic fermentation of these varieties begins at a temperature of 25 to 28 °C for 15 to 20 days. Malolactic fermentation and aging take place separately in small oak barrels for 18 months, which favors the blending of rich and noble aromas of wood and grapes. In order to combine the best qualities of the above-mentioned varieties, the wine is blended and aged in a large barrel for a period of a few months, after which the wine is bottled and aged and rounded off in bottles for the next 6 months.
